It exemplifies the wineryâs time-honored approach to long aging: six years in seasoned American oak barrels, racked twice a year and fined with fresh egg whites, followed by additional bottle maturation without filtration. The result is a graceful, medium-bodied wine at 13% alcohol with 6.6 g/l of total acidity and a very dry profile. Aromas of jamĂłn, leather, and cedar spice meld with red cherry compote and a fragrant touch of orange zest. On the palate, its bright acidity, gently integrated oak, and hints of dried berry form a poised, energetic profile.
